Baker's Cheesy Eggs
11 February 2006
Nothing hits the spot for breakfast like eggs, and if you add cheese—wow! So about three or four days a week, Baker and I get up in the morning and have cheesy eggs. It goes like so:
Ingredients
- Two to three eggs
- Small handful of shredded cheddar cheese
- Non-stick cooking spray
Directions
Scramble two to three eggs in a bowl (for Baker and myself) and get a small non-stick skillet started on medium heat. After it begins to get hot, spray in a little non-stick spray and pour in the eggs. Now sprinkle on the shredded cheddar cheese and start scramblin’! Doing this before the skillet gets to full heat helps the cheese to incorporate and get all good.
I like to get the eggs pretty done so Baker can pick them up easily—but feel free to make them goopy if you like. There’s no need for salt and pepper since the cheese flavors ‘em up just right. Serve a little on the high-chair tray and a little on your plate and enjoy!
